Tom Yum me Soup  - Quick and Easy dinner

The famous Thai soup, I have made this for years

ingredients

1.Tom Yum Paste - 2 heaped tablespoons
Only found at Asian shops, supermarkets don't stock it anymore.


2. 1 or 2 chicken breasts
3. Green uncooked prawns
In the picture, I used the prawns with the tail on we don't seem to sell them tail off.
4. 6 cups boiling water- boil the kettle
5. splash of fish sauce
6. 1/2 a cup of coconut milk
7. 1/2 cup frozen veggies can add more if you like.
8. Mushrooms. 1 cup.  I used field mushrooms you can use any kind.
9. Coriander, cilantro in the USA.
10. Lime to serve

How to do it:

Boil a full kettle, measure out 6 cups and put it in a large pot.

Add 2 heaped spoons of Tom Yum Paste, if it looks red that is good that is all the flavour. Give it a stir. If you don't like it spicy you can add less paste.

Chop up your chicken breast add. stir.

Add coconut milk.

Add a splash of fish sauce.

Add chopped mushrooms.

Add frozen prawns.

Add frozen veggies.

Cook, until everything is cooked through especially, check the chicken, have a taste. 

Serve in your fav bowl, mine is a Japanese Blue wave bowl.

Top with coriander and lime.

Sit in a calm place and enjoy.
