Meals for quick food on a budget to feed

a Family of 4.

Shopping tips and products you

 need to make the meals

  • Taco Kit: when you cook the mince chicken or beef, put the two satchels in the meat the powered spice, water and the salsa this give a great more authentic flavour. I like the Aldi Taco kit the best is better value you get 15 tacos and the sauce is milder for kids.El Toro Taco kit from Aldi is the best value, you get 15 tacos in the kit and the flavour is mild with is great for kids. It costs $4.00.au

  • Stirfry various kinds: chicken mince with thin white noodles, bean noodle vermicelli in Asian section from Coles or Woolies. Onion garlic mince- add soy sauce fish sauce and smoked paprika for colour and flavour. Throw in some frozen veges. Done.

chicken breast stir fry: chop 2 chicken breasts place in a bowl. Make the marinate in cup and add. Marinate is about 1/8 of a cup of soy sauce, 2 tbsp oil, 2 tbsp vinegar, clove of garlic. Fry on hot pan add frozen veges. Serve on rice. You can do the same recipe with beef.

Red Chicken Curry

Our fave we like the red colour on food.

4 tbsp of red curry so its less spicy for kids, chopped up chicken breast, coconut cream or milk, add frozen veges serve on rice.

Rice and Tuna

One of my kids favourite meals when I don't feel like cooking is Rice and Tuna. I always have some rice ready in the fridge. We like the taste and texture of brown medium grain rice. Available at Coles or Woolies.

They now sell big bags of this rice 5 kgs. When its on sale at Coles you can buy it for $6. Half price.

Open and can of tuna (Coles have the 80c tuna) hey presto kids are eating. Can add soy sauce and frozen veges if you like.

 Nachos from scratch.

This is a tasty family fave. If anyone wants the recipe let me know.

You need to use passata and red kidney beans and mince and some herbs and spices. Plain corn chips and cheese.

I was asked for the recipe.

Beef Nachos

Beef mince 500g ( I use the $6 a kg mince from Aldi and Coles)
Onion (red onion is nice) chopped
Garlic chopped
Capisicum red chopped

Smoked Paprika (Can buy at Coles of Woolies, Aldis paprika will work not as tasty)
Cumin
Oregano
Beef stock cube dissolved in a cup of boiling water.

Passata tomato sauce 1/4 of a bottle (they sell this at any supermarket, Aldi, Coles, Woolies)
Red Kidney beans canned and drained and rinsed.

Tasty Cheese

Plain Corn chips
Vegeta vege salt.

Method: Fry the onion and garlic, add the chopped capsicum.
Fry the mince until brown.

Add in the beef stock cup, passata, red kidney beans add a bit of paprika, cumin and oregano ( I don't measure but you can start with 1 tsp of paprika and 1/2 of cumin and 1/2 of oregano). Let it boil with the lid off so some of the liquid evaporates and the flavour intensifies.  Taste it! I often add vegeta which is a tasty vege salt. I often make this in a double batch 1 kg of mince 2 cans of kidney beans etc. because everyone love it. You can eat it with rice if you prefer.

To Serve: Grate cheese

Place plain corn chips around serve of nachos. You can make it look real pretty. Just letting you know this is not our meal just did a quick search of images. My kids would never eat sour cream, just cheese on top.
